Slow Cooker Mongolian Beef

Ingredients:

2 1/2 - 3 lbs Boneless Chuck Roast
1/2 Cup Soy Sauce
1/2 Cup Light Brown Sugar, packed
1 Tbsp Minced Garlic
1 Tbsp Fresh Ginger, minced
1 Tbsp Sesame Oil
1 Tbsp Apple Cider Vinegar
1 Tsp Onion Powder
Sliced Green Onions, for garnish
Sesame Seeds, for garnish

Directions:

  1. Place the chuck roast in the bowl of a slow cooker.
  2. Combine the soy sauce, brown sugar, garlic, ginger, sesame oil, apple cider vinegar, and onion powder in a small bowl. Pour over the chuck roast.
  3. Rotate the meat a few times until both sides are coated in the sauce.
  4. Cover and cook on LOW for 7-8 hours.
  5. When done, it should fall apart as you remove it from the slow cooker. Serve over a bed of rice and garnish with sliced green onions and a sprinkle of sesame seeds. Spoon over some of the sauce mixture (optional). Enjoy!
