Dumpling Smashed Tacos

Ingredients:

DIPPING SAUCE:
1/2 Cup Soy Sauce
2 Tbsp Green Onion, minced
3 Garlic Cloves, minced
4 Tsp Rice Vinegar
4 Tsp Honey
1/2 Tsp Ground Ginger
1 1/2 Tsp Sesame Oil
1 Tsp Garlic Chili Sauce
1/2 Tsp Red Pepper Flakes
SMASH TACO:
1/2 Cup Mayonnaise
1-2 Tbsp Sriracha
1 lb Ground Chicken or Pork
1/4 Cup Green Onion, minced
1 Tbsp Fresh Chopped Cilantro
1-2 Garlic Cloves, minced
1 Tsp Garlic Chili Sauce
1/2 Tsp Salt
1/4 Tsp Black Pepper
Coleslaw, storebought or homemade
6 Small Tortillas (6-inch size)

Directions:

  1. Make the dipping sauce. Combine the soy sauce, 2 tbsp green onion, garlic, rice vinegar, honey, ground ginger, sesame oil, garlic chili sauce, and red pepper flakes in a bowl. Whisk to combine and set aside.
  2. Make the spicy mayo. Combine the mayonnaise and sriracha in a bowl. Whisk to combine and set aside.
  3. Preheat the oven to 250 degrees F and line a baking sheet with parchment paper. Set aside.
  4. Prepare the meat mixture. Combine the ground chicken or pork, green onion, cilantro, garlic, garlic chili sauce, salt, and pepper in a large bowl. Mix until just combined.
  5. Lay 6 tortillas on the counter and evenly divide the mixture between each tortilla. Press down and spread the meat almost all the way to the sides. The meat should be a thin layer.
  6. Heat a skillet over medium heat. Add one tortilla with the meat down. Use a spatula to press down on the tortilla to make sure the meat is flattened. Cook for 5-6 minutes, the meat should be cooked through. Flip and cook on the other side for 1-2 minutes to crisp the tortilla. Transfer to the prepared baking sheet and place in the oven to keep warm while you cook the rest of the “tacos”. Repeat this step until all 6 tacos are cooked.
  7. When ready to assemble, top each with coleslaw. Drizzle a little spicy mayo over the top.
  8. Serve immediately with the sauce on the side for dipping! To eat, simply fold in half like a taco.
