Cranberry, Fig & Walnut Compote





Serves 3 cups
Ingredients:

Topping for Brie or Triple Cream cheese+ Add to Shopping List |
2 tablespoons olive oil+ Add to Shopping List |
2 small shallots, chopped+ Add to Shopping List |
1 cup dried figs, chopped+ Add to Shopping List |
1 cup craisins+ Add to Shopping List |
1 teaspoon orange zest+ Add to Shopping List |
5 tablespoons fresh orange juice+ Add to Shopping List |
1 cup sherry wine+ Add to Shopping List |
1/3 cup maple syrup+ Add to Shopping List |
1 teaspoon black pepper+ Add to Shopping List |
1/2 cup toasted walnuts, chopped+ Add to Shopping List |
Directions:
- Place oil in saucepan on medium high heat. Add shallots & caramelize, about 5 minutes. Then add sherry, craisins, figs, zest, orange juice, syrup and cook on medium heat until juices reduce by half, about 15 minutes. Add pepper and remove from heat. Cool at room temperature, then fold in nuts. Serve warm or at room temperature with cheese.
