Citrus Ricotta Cheesecake

Serves 8


Ingredients:

2 lb ricotta cheese
2/3 cup sugar
1/3 cup flour
6 eggs
2 teaspoons orange zest
2 teaspoons lemon zest
2 teaspoons vanilla
1/8 teaspoon salt
1 1/2 cups lemon cookies with filling, filling removed andfinely ground

Directions:

  1. In small bowl combine flour and sugar, mix well.
  2. In a larger bowl add ricotta & flour mixture. Add eggs one at a time, then add remaining ingredients except the cookies.
  3. Spray & line 9-10" springform pan with parchment paper. Add cookies evenly coating the bottom & press down firmly to hold its shape. Add batter to pan, bake at 225' for up to 2 hours, or until center is fairly firm. A knife inserted should come out clean. Chill until ready to serve. Serve with fresh fruit!
