Cherry Wine Sauce





Serves 2 cups
Ingredients:
| 2 tablespoons olive oil |
| 1/4 cup minced yellow onion |
| 1/2 jalapeño pepper, seeded and left whole |
| 1 cup dried cherries |
| 1 1/2 cups red wine |
| 1 cup beef broth |
| Salt, to taste |
| 1 tablespoon unsalted butter |
Directions:
- Heat oil in medium saucepan on medium high heat. Add onion and pepper and sauté for 1 minute. Add wine, broth and cherries. Bring to a boil, then simmer for 20-30 minutes or until reduced by half. Season to taste with salt and pepper and add butter.
- Remove jalapeño and set aside. Keep sauce warm until ready to serve. Great with pork, chicken or turkey!
