Red Wine Olive Sauce





Serves 3 cups
Ingredients:
| 1 shallot, minced |
| 2 cloves garlic, minced |
| 2 tablespoons olive oil |
| 1 cup Greek mix olives, pitted & halved |
| 1 cup beef broth |
| 1/2 cup red wine |
| 4 tablespoons butter |
| 1/4 cup heavy cream |
| Salt, to taste |
| Pepper, to taste |
Directions:
- In wide saucepan on med-high heat add oil. When hot add shallot, garlic and olives. Saute 2 minutes, then add wine and reduce by half. Add broth and reduce again by half. Turn heat to low and whisk in butter, cream, salt & pepper. Serve immediately!
- You can also add chopped fresh herbs like thyme or rosemary at the end. Great with beef, pork or chicken.
