Ingredients:
| 1 lb fresh crab meat |
| 2 tablespoons butter |
| 1 tablespoon diced red bell pepper |
| 1/2 cup chopped scallions |
| 1 teaspoon minced garlic |
| 1 egg |
| 1/4 cup mayonnaise |
| 1 tablespoon Dijon mustard |
| 1/2 cup vegetable oil |
| 1/4 cup minced fresh parsley |
| 2 tablespoons plain breadcrumbs, plus 1 to 2 cups breadcrumbs |
| Salt, to taste |
| Pepper, to taste |
| 1/4 cup cooking oil |
Directions:
- In saute pan, melt butter on medium heat. Add peppers, scallions and garlic. Saute until soft, set aside and cool.
- In bowl, combine crab, cooled peppers mixture, egg, mayo, mustard, salt, pepper, parsley and bread crumbs. Form into patties; coat each pattie with additional breadcrumbs and chill.
- Heat oil in frying pan on medium high heat. Add crab cakes 2 at a time, cooking 5 minutes on each side until brown and crispy! Serve warm!
