Shrimp Scampi Linguine





Serves 4
Ingredients:

1 lb linguine pasta+ Add to Shopping List |
4 tablespoons unsalted butter+ Add to Shopping List |
4 tablespoons olive oil+ Add to Shopping List |
1 large shallot, finely chopped+ Add to Shopping List |
5 cloves garlic, minced+ Add to Shopping List |
1 teaspoon red pepper flakes+ Add to Shopping List |
1 lb shrimp, peeled & deveined+ Add to Shopping List |
1/2 cup white wine+ Add to Shopping List |
3 tablespoons lemon juice+ Add to Shopping List |
1/4 cup Italian parsley, chopped+ Add to Shopping List |
Fresh grated parmesan cheese, for topping+ Add to Shopping List |
Salt, to taste+ Add to Shopping List |
Pepper, to taste+ Add to Shopping List |
Directions:
- Cook pasta according to directions. When draining pasta, reserve 1 cup of liquid for later.
- In large skillet, heat 2 tablespoons butter plus 2 tablespoons olive oil on medium high heat. Sauté shallots, garlic and pepper flakes for 2-3 minutes. Add shrimp to pan with salt and pepper and stir while cooking until just turning pink, about 2-3 minutes. Remove shrimp and set aside.
- To pan add in wine, lemon juice and reserved liquid and bring to a boil. Add in remaining butter and oil. Throw shrimp back in along with the parsley, salt and pepper and pour entire sauce over pasta with grated parmesan and an extra drizzle of olive oil and serve!
