Roasted Root Vegetables





Serves 8
Ingredients:
| 1 celery root, peeled & diced |
| 3 shallots, peeled & chopped |
| 4 red potatoes, diced |
| 1 small squash, peeled & diced |
| 1 parsnip, peeled & diced |
| 2 cloves garlic, chopped |
| 1/3 cup olive oil |
| 1 tablespoon rosemary, optional |
| Salt, to taste |
| Pepper, to taste |
Directions:
- Place all ingredients in large mixing bowl. Toss to coat with oil & seasonings. Spread out on a baking sheet & bake at 400 degrees F for about 20-30 minutes or until golden brown.
