Beemster Aged Beef Enchiladas

Ingredients:
5 oz Beemster Classic Aged Cheddar
14 oz ground Beef
1 1/2 tablespoons Taco seasoning
2 cloves garlic, finely chopped
2 cans chopped tomatoes, (14 oz. each)
8 small flour tortillas, (8 inches in diameter)
2 green onions, sliced into rings
1/2 cup sour cream
2 tablespoons coarsely chopped fresh cilantro
Directions:
Preheat the oven to 400 degrees F. Grate the cheese coarsely. Without adding any oil, fry the ground beef in a frying pan until done. Stir in 1 tbsp. taco seasoning, garlic and 1 can of chopped tomatoes and simmer a few minutes.
Season with salt and pepper. Empty the second can of chopped tomatoes into a bowl and stir 1/2 tablespoon taco seasoning.
Place the flour tortillas on a plate or cutting board one by one and spoon in a line of beef filling horizontally across the lower half of the tortilla. Sprinkle with a few green onion rings and cheese, roll up into an enchilada and carefully arrange in the baking dish.
Top with the chopped tomatoes and sour cream and sprinkle with the rest of the cheese. Place the dish in the oven and bake the enchiladas for 25-30 minutes until golden brown. Garnish with cilantro.
