Beemster Aged Beef Enchiladas





Serves 4
Ingredients:

5 oz Beemster Classic Aged Cheddar+ Add to Shopping List |
14 oz ground Beef+ Add to Shopping List |
1 1/2 tablespoons Taco seasoning+ Add to Shopping List |
2 cloves garlic, finely chopped+ Add to Shopping List |
2 cans chopped tomatoes, (14 oz. each)+ Add to Shopping List |
8 small flour tortillas, (8 inches in diameter)+ Add to Shopping List |
2 green onions, sliced into rings+ Add to Shopping List |
1/2 cup sour cream+ Add to Shopping List |
2 tablespoons coarsely chopped fresh cilantro+ Add to Shopping List |
Directions:
- Preheat the oven to 400 degrees F. Grate the cheese coarsely. Without adding any oil, fry the ground beef in a frying pan until done. Stir in 1 tbsp. taco seasoning, garlic and 1 can of chopped tomatoes and simmer a few minutes.
- Season with salt and pepper. Empty the second can of chopped tomatoes into a bowl and stir 1/2 tablespoon taco seasoning.
- Place the flour tortillas on a plate or cutting board one by one and spoon in a line of beef filling horizontally across the lower half of the tortilla. Sprinkle with a few green onion rings and cheese, roll up into an enchilada and carefully arrange in the baking dish.
- Top with the chopped tomatoes and sour cream and sprinkle with the rest of the cheese. Place the dish in the oven and bake the enchiladas for 25-30 minutes until golden brown. Garnish with cilantro.
