Toasted Meatloaf Sandwiches





Serves 4
Ingredients:
| 4 slices leftover cold Festival's Mom's meatloaf, (half-inch thick) |
| Olive oil |
| 8 slices English muffin toasting bread, or 4 Ciabatta rolls, split |
| 8 slices Pepper Jack or Sharp Cheddar Cheese |
| French fried onions, for topping, if desired |
| 1 tablespoon Wee Willey's Sandwich Relish |
| Butter, for toasting |
| 1/2 cup ketchup |
| 1 tablespoon yellow or honey mustard |
| Sea salt |
| Freshly ground pepper |
Directions:
- In a small bowl, whisk together meatloaf sauce ingredients; set aside.
- Preheat large sauté pan over medium-high heat. Add about 1 Tbsp. olive oil to pan and heat meatloaf slices on both sides until a little crispy, about 5 minutes.
- Transfer to platter and cover to keep warm. Spread both sides of bread or rolls with meatloaf sauce. Layer with a slice of cheese, a slice of meatloaf, a little more meatloaf sauce, a sprinkle of salt and pepper and a few French fried onions, if using, and finish with another slice of cheese. Top with top bread slice or roll.
- Melt butter in pan or medium heat and toast sandwich on both sides until toasted and cheese is melted, about 5 minutes per side. Let stand 5 minutes before slicing in half crosswise. Serve on the side with your favorite soup.
