8 slices English muffin toasting bread, or 4 Ciabatta rolls, split
8 slices Pepper Jack or Sharp Cheddar Cheese
French fried onions, for topping, if desired
1 tablespoon Wee Willey's Sandwich Relish
Butter, for toasting
1/2 cup ketchup
1 tablespoon yellow or honey mustard
Sea salt
Freshly ground pepper
Directions:
In a small bowl, whisk together meatloaf sauce ingredients; set aside.
Preheat large sauté pan over medium-high heat. Add about 1 Tbsp. olive oil to pan and heat meatloaf slices on both sides until a little crispy, about 5 minutes.
Transfer to platter and cover to keep warm. Spread both sides of bread or rolls with meatloaf sauce. Layer with a slice of cheese, a slice of meatloaf, a little more meatloaf sauce, a sprinkle of salt and pepper and a few French fried onions, if using, and finish with another slice of cheese. Top with top bread slice or roll.
Melt butter in pan or medium heat and toast sandwich on both sides until toasted and cheese is melted, about 5 minutes per side. Let stand 5 minutes before slicing in half crosswise. Serve on the side with your favorite soup.
