Anytime Energy Cookies

Serves 12


Ingredients:

1/2 cup butter, softened
2/3 cup packed brown sugar
2 eggs
1/2 teaspoon Vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup Whole wheat flour
1 cup rolled oats
1 1/2 cups tropical trail mix, (pineapple, raisins, dates, banana chips, papaya, coconut flakes)
1 cup dried cranberries
1/2 cup dried banana chips, broken up
1/2 cup chopped walnuts, peanuts, pecans, almonds, or cashews

Directions:

  1. Preheat oven to 350 degrees F. Grease a cookie sheet or use parchment paper.
  2. Place softened butter and brown sugar into a mixer and mix for 30 seconds on medium speed, occasionally scraping the bowl with rubber spatula. Add the eggs and vanilla; mix until combined, then add the baking powder, baking soda and salt; mix until combined.
  3. With rubber spatula, stir in the whole wheat flour, oats, trail mix, cranberries, banana chips, and nuts.
  4. Scoop dough with a 1/4 cup measuring cup or an ice cream scoop. Drop dough about 2" apart onto prepared cookie sheets. Use your hands to slightly flatten dough.
  5. Bake in oven for about 12 - 15 minutes or until the edges begin to brown. Let cookie sit on cookie sheet for 2 minutes then remove onto a cooling rack. Once cooled, place in an air tight container.
  6. Grab a cookie with a small bottle of juice and head out the door!
