Anytime Energy Cookies





Serves 12
Ingredients:
| 1/2 cup butter, softened |
| 2/3 cup packed brown sugar |
| 2 eggs |
| 1/2 teaspoon Vanilla extract |
| 1/2 teaspoon baking powder |
| 1/4 teaspoon baking soda |
| 1/4 teaspoon salt |
| 1 cup Whole wheat flour |
| 1 cup rolled oats |
| 1 1/2 cups tropical trail mix, (pineapple, raisins, dates, banana chips, papaya, coconut flakes) |
| 1 cup dried cranberries |
| 1/2 cup dried banana chips, broken up |
| 1/2 cup chopped walnuts, peanuts, pecans, almonds, or cashews |
Directions:
- Preheat oven to 350 degrees F. Grease a cookie sheet or use parchment paper.
- Place softened butter and brown sugar into a mixer and mix for 30 seconds on medium speed, occasionally scraping the bowl with rubber spatula. Add the eggs and vanilla; mix until combined, then add the baking powder, baking soda and salt; mix until combined.
- With rubber spatula, stir in the whole wheat flour, oats, trail mix, cranberries, banana chips, and nuts.
- Scoop dough with a 1/4 cup measuring cup or an ice cream scoop. Drop dough about 2" apart onto prepared cookie sheets. Use your hands to slightly flatten dough.
- Bake in oven for about 12 - 15 minutes or until the edges begin to brown. Let cookie sit on cookie sheet for 2 minutes then remove onto a cooling rack. Once cooled, place in an air tight container.
- Grab a cookie with a small bottle of juice and head out the door!
