Ingredients:
| 1 1/2 lb. fish fillets, (cod, tilapia, walleye or other mild fish) |
| Sea Salt |
| Freshly ground pepper |
| 1 cup shredded Sharp Cheddar Cheese |
| 1 cup tortilla chips, roughly crushed |
| 1 cup salsa |
Directions:
- Preheat oven to 400 degrees F. Butter a 9 x 13-inch baking dish.
- Spread prepared Spanish rice over bottom of pan. Sprinkle fish fillets evenly with salt and pepper, and lay evenly over rice. Spread salsa evenly over fish; sprinkle with shredded cheddar and top with tortilla chips.
- Bake for 15 to 20 minutes or until fish is cooked through and top is nicely browned and bubbly.
