Caramel-Pecan Brittle





Serves 10-15 pieces
Ingredients:
| 1/2 cup Caramel Dip, (not low-fat or fat free) |
| 1 cup sugar |
| 2 cups pecan halves, lightly toasted |
| 1 teaspoon butter |
| 1 teaspoon vanilla extract |
| 1 teaspoon baking soda |
Directions:
- Lightly butter a cookie sheet pan.
- Combine caramel dip and sugar in microwave-safe bowl. Microwave on high power for 4 minutes. Stir in pecans; return bowl to microwave for 3 more minutes. Stir in butter and vanilla and return to microwave for 90 seconds. Stir in baking soda and immediately pour mixture into prepared pan.
- Using a spatula, spread mixture into a layer about 1/4-inch thick. Cool completely and break into pieces. To store brittle, layer on wax paper in airtight container.
