Preheat crock pot or slow cooker on high setting. Spray the inside evenly with olive oil cooking spray. Place half of the diced onions in bottom of crock pot.
Rub all sides of pork with olive oil then rub all over with liquid smoke. Sprinkle rub seasoning evenly all over pork, pressing lightly so seasoning sticks to the meat. Place seasoned pork roast on top of onions in crock pot. Sprinkle top of the roast with the rest of the onions and the minced garlic. Cook on high setting for 4 to 5 hours or on low for 8 to 10 hours.
Keep crock pot on high heat setting and remove pork to a large sheet pan. Let pork cool enough to handle and using gloved hands, pull and shred the pork discarding any bones or excess fat and placing pulled pork back into hot crock pot. Make sure you keep any juices that have accumulated in crock pot and mix with shredded pork.
Add bottle of BBQ sauce, tossing to mix sauce and pork together evenly until heated through. Season to taste with more rub seasoning and salt and pepper. Serve on butter toasted buns with a generous tablespoon of coleslaw.
