Ingredients:
| 1 1/2 pounds chicken breast or steak, cut into strips |
| vegetable oil |
| 1/2 cup fajita marinade |
| 1 package fajita sauce or sauce mix |
| 1 large onion, cut into thin strips |
| 2 large bell peppers (any color) |
| 8 tortillas |
| shredded mexican cheese |
| salsa |
| sour cream |
Directions:
- Place chicken or steak strips in zip top plastic bag and pour Fajita marinade over it, making sure all pieces get coated. Marinate in fridge at least 30 minutes and up to overnight.
- *Preheat grill to medium-high heat. Spray grill tray, pan, or basket with Grilling Pam. Discard marinade and lay chicken or steak strips on grill tray and grill until slightly charred and cooked through, about 3 minutes per side. Transfer to platter, tent with foil. Meanwhile, in medium bowl, toss sliced onions and peppers with 2 tablespoons oil and sprinkle with Adobo seasoning. Spread out over grill tray and sauté on grill until charred and slightly soft. Stir in reserved grilled chicken strips and Fajita sauce and toss to coat. Transfer to platter and serve hot in warm flour tortillas with your favorite toppings. Serve with Cilantro Lime Rice and Black Beans on the side and garnish with chopped fresh cilantro and a squeeze of fresh lime juice, if desired.
- *Chef’s Note: Can be made in cast iron or nonstick skillet on stovetop as well. Follow same directions above but make in skillet instead of on grill.
