Ingredients:
| 1 lb ground beef |
| 2 large sweet potatoes, thicker around is better |
| 6 slices bacon, cooked |
| chipotle mayonnaise, preferably Primal Kitchen Chipotle Lime Mayo |
| Olive Oil |
| Sea Salt |
| Additional toppings such as lettuce, tomato, onion, or avocado. |
Directions:
- Slice the Sweet potatoes into 12, ½ inch thick round discs. Lightly brush with olive oil and sprinkle with salt. Line a sheet pan with a piece of parchment paper. Arrange the sweet potato discs on the pan and bake in a 425 degree oven for approximately 25-30 minutes or until tender but not mushy.
- While the potatoes are baking, divide and form the pound of ground beef into 6 slider patties and cook on the grill or fry in a skillet.
- When the potatoes are tender, remove from the oven and allow them to cool awhile. Assemble your sliders using 2 sweet potato discs as the bun. Cut your previously cooked bacon slices and cut them in half, adding 2 of the half-sized pieces to each burger. Add your remaining topping choices and chipotle mayonnaise. Enjoy!
