Green Beans with Cranberries and Walnuts





Ingredients:
+ Add All Ingredients to Shopping List
1 lb Fresh Green Beans, washed and ends trimmed+ Add to Shopping List |
4 Garlic Cloves, peeled and sliced into quarters+ Add to Shopping List |
2 Tbsp Olive Oil+ Add to Shopping List |
Salt & Pepper, for seasoning+ Add to Shopping List |
Sprinkle of Sugar+ Add to Shopping List |
1 Tsp Lemon Zest+ Add to Shopping List |
2 Tsp Lemon Juice+ Add to Shopping List |
1/2 Cup Dried Cranberries, plus more to taste+ Add to Shopping List |
1/2 Cup Chopped Walnuts, plus more to taste+ Add to Shopping List |
Directions:
- Preheat the oven to 350 degrees. Line a baking sheet with aluminum foil.
- Toss the green beans with garlic, olive oil, salt, pepper, and sugar. This can be done in a bowl or right on the baking sheet. Spread in a single layer on the baking sheet and roast for 10 minutes.
- Remove from the oven, toss the green beans, and bake for another 10 minutes. The beans should be tender and just starting to shrivel.
- Add the lemon zest, lemon juice, cranberries and walnuts. Toss to combine. Add additional salt, pepper, and lemon juice to taste. Serve warm.
