Ingredients:
| 1/4 Cup Vegetable Oil |
| 3/4 Cup Guinness Beer |
| 2 Cups Sugar |
| 1/2 Tsp Vanilla Extract |
| 1/4 Cup Salted Butter, melted and cooled |
| 2 Eggs |
| 1 Cup Flour |
| 2/3 Cup Dark Cocoa Powder |
- Preheat the oven to 350 degrees. Grease and 8x8 or 9x9 baking pan with cooking spray.
- Melt the butter and let cool.
- In a large bowl, combine the vegetable oil, Guinness beer, sugar and vanilla extract.
- Add the butter and mix until combined.
- Add the 2 eggs and mix until combined.
- In a small bowl, combine and flour and cocoa powder. Slowly add to the bowl with the wet ingredients. Mix well to combine.
- Pour the batter into the prepared baking dish and spread into an even layer. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let cool.
- Once the brownies have cooled, make the ganache (see below for ingredients). Add the chocolate chips and butter to a microwave safe bowl. Microwave on high for 30 seconds, then stir, then continue to microwave in 30 second intervals until completely melted.
- Add the Guinness and stir to combine.
- Add the powdered sugar and stir to combine, until smooth.
- Pour the ganache over the brownies and spread into an even layer. Place on the counter or in the fridge to let the ganache set.
- Slice and serve!
