Cajun Turkey Burgers with Spicy Remoulade

Ingredients:
Olive Oil
1 Red Bell Pepper, thinly sliced
1 Yellow Bell Pepper, thinly sliced
1 Medium Yellow Onion, thinly sliced
1 lb Ground Turkey
1/4 Cup Green Onions, sliced
2 Tsp Cajun Seasoning
2 Tsp Frank's Hot Sauce
1/2 Tsp Salt
1/4 Tsp Black Pepper
Old Bay Seasoning
4 Hamburger Buns
1 Batch Spicy Remoulade, for topping
Spicy Remoulade Ingredients
1 Cup Mayonnaise
1/4 Cup Pickle Relish
2 Tbsp Capers, drained
1 1/2 Tbsp Spicy Brown Mustard
2 Tbsp Fresh Parsley, minced
4 Tsp Frank's Hot Sauce
1 Tsp Lemon Juice
Start by making the spicy remoulade. In a mixing bowl, combine the mayonnaise, relish, capers, mustard, parsley, hot sauce, and lemon juice. Stir well and keep refrigerated until ready to use.
Slice the bell peppers and onion and set aside.
In a large mixing bowl, combine the turkey, green onion, Cajun seasoning, hot sauce, salt, and pepper. Form into 4 patties and season both sides with Old Bay Seasoning.
Add oil to 2 separate skillets and heat over medium heat.
Add the bell peppers and onion to one skillet. Cook for about 10 minutes, stirring occasionally, until soft and tender.
Add the turkey patties to the other skillet. Cook for about 14 minutes, flipping halfway, or until an internal temperature of 165 degrees F is reached.
Assemble the burgers. Spread a heaping spoonful of the remoulade on the bottom half of each bun. Add a burger patty and top with the bell pepper / onion mixture. Serve immediately.
