Castello Creamy Havarti with Bacon on Crostini

Serves 4


8 slices diagonally sliced cut french bread
2 tablespoons olive oil
1 teaspoon salt
chopped fresh herbs (such as chives, dill, parsley, or rosemary)
8 slices of smoked bacon, cooked
2 oz Castello Creamy Havarti, shaved


  1. Brush one side of the bread with olive oil. Sprinkle with salt and herbs. Arrange slices on a baking sheet and place under a broiler until edges of the bread crisp to a golden brown, about 3 min.
  2. Remove pan from the heat and top each bread with a layer of crumbled bacon and shaved Castello Havarti. Return the pan to the broiler and heat until cheese melts, about 3 min. Remove and immediately sprinkle with remaining chopped herb. Served while hot or at room temperature.
