Chicken Bacon Ranch Sandwiches

Ingredients:

4 Cups Cooked Chicken, rotisserie chicken works well
8 oz Plain Cream Cheese
1 Packet Hidden Valley Ranch Seasoning
8-10 Slices Cheddar Cheese
8-10 Slices Bacon, cooked
4-5 Hamburger Buns
Ranch Dressing, optional, for serving

Directions:

  1. Cook the bacon according to package instructions. Set aside.
  2. Add the cream cheese to a large saucepan or pot and heat over medium-low heat. Once the cream cheese is about ½ melted, add the entire packet of ranch seasoning. Stir to combine and continue to melt the cream cheese.
  3. Once melted, add the cooked chicken and stir to coat. Continue to heat for about 10 minutes, stirring occasionally, until the chicken is heated through.
  4. While the chicken is cooking, preheat the oven to 350 degrees F. Place the buns, open-faced, on a baking sheet. Add one slice of cheddar cheese to each half of the bun. Place in the oven to melt the cheese for 4-5 minutes.
  5. Assemble the sandwiches. Place 2 pieces of bacon on the bottom half of the bun (break in half if needed). Top with a heaping portion of the chicken mixture. Drizzle with ranch dressing, optional. Place the other half of the bun on top. Repeat to assemble the rest of the sandwiches. Enjoy!
