Tarragon Cream Sauce

Ingredients:

1 tablespoon unsalted butter
1 large shallot, chopped
2 cups heavy whipping cream
3 teaspoons fresh tarragon, finely chopped
2 teaspoons fresh lemon juice
fine sea salt, to taste
pinch of white pepper

Directions:

  1. Melt butter in a heavy skillet, add chopped shallot. Cook and stir over medium heat until tender. Add cream, Increase heat to medium-high; cook until slightly thickened. Stir in tarragon, lemon juice, salt and white pepper.
  2. * Excellent cream sauce for salmon to serve warm on grilled or seared salmon.
