Ingredients:
| 8 oz low fat Neufchatel cream cheese |
| 15 oz queso blanco white cheese sauce |
| 14 oz Crazy Fresh Salsa, Pico de Gallo |
| 24 oz Frozen Fire Roasted Corn, prepared according to instructions |
| 15 oz black beans, rinsed |
| 1 bunch fresh cilantro, finely chopped |
| 4 oz crumbled Cotija cheese |
| 1 serrano pepper, finely chopped |
- Preheat oven or grill to 400ºF.
- In a large bowl, soften cream cheese 45 to 60 seconds in a microwave.
- In same bowl, add queso, pico de gallo, corn, black beans, and cilantro stirring gently to mix together.
- Pour into an oven-safe skillet or dish and top with crumbled Cotija cheese and serrano.
- Place pan in oven for 35 minutes.
- Serve warm directly from skillet with tortilla chips.
- Make above recipe and top a beef or chicken burger with Mexican Street Corn Queso and crumble some blue corn tortilla chips for a little crunch and enjoy a great burger
