Mexican Corn Tostadas

1 can (15 oz) Whole Kernel Corn, drained
1/4 cup Mayonnaise
1/3 cup Red Onion, finale chopped
1/3 cup Cilantro, finely chopped
Juice of 1/2 lime
1/4 teaspoon Salt
2 Tablespoon Cotija Cheese, plus more for topping
1 can (15 oz) Refried Beans
8 Corn Tostadas
chili powder, to season for topping.


  1. In a large bowl, combine the corn, mayo, red onion, cilantro, lime juice, salt, and cotija cheese.
  2. Heat the refried beans in a microwave safe dish for 2-3 minutes.
  3. To assemble, spread the refried beans on the tostadas. Then top with the corn mixture.
  4. Sprinkle more cotija cheese and a little chili powder on top.
