Ingredients:
| 1 can (15 oz) Whole Kernel Corn, drained |
| 1/4 cup Mayonnaise |
| 1/3 cup Red Onion, finale chopped |
| 1/3 cup Cilantro, finely chopped |
| Juice of 1/2 lime |
| 1/4 teaspoon Salt |
| 2 Tablespoon Cotija Cheese, plus more for topping |
| 1 can (15 oz) Refried Beans |
| 8 Corn Tostadas |
| chili powder, to season for topping. |
Directions:
- In a large bowl, combine the corn, mayo, red onion, cilantro, lime juice, salt, and cotija cheese.
- Heat the refried beans in a microwave safe dish for 2-3 minutes.
- To assemble, spread the refried beans on the tostadas. Then top with the corn mixture.
- Sprinkle more cotija cheese and a little chili powder on top.
