Ingredients:
| 1 1/2 Cups Heavy Cream |
| 6 Large Egg Yolks, lightly whisked |
| 14 oz Sweetened Condensed Milk |
| 1/2 Cup Nellie & Joe's Key West Lime Juice |
| 1 Cup Graham Crackers, crumbled, plus more for topping |
Directions:
- Add the cream to a saucepan and bring to a simmer over medium-low heat.
- Add the egg yolks to a heat safe bowl. Discard the egg whites or save for another recipe. Start to slowly whisk the eggs. Spoon small amounts of the hot cream into the egg yolks while continuously whisking. You want to add a few spoonsful to temper the eggs. Pour the egg mixture into the saucepan with the rest of the cream and continue to whisk until well combined.
- Continue to heat on low until the mixture thickens and coats the back of a spoon. This will happen quickly.
- Remove from the heat and add the sweetened condensed milk and lime juice. Whisk to combine.
- Place in the fridge to cool completely and chill. Once chilled, process in your ice cream make according to manufactures instructions. When done, stir in 1 cup of crumbled graham crackers.
- Transfer to a freer safe dish and freeze for at least 4 hours or until the desired consistency is reached.
- Serve, garnished with additional graham cracker crumbled, and enjoy!
