Ingredients:

2 Tbsp Olive Oil+ Add to Shopping List |
1 Large White Onion, chopped+ Add to Shopping List |

2 1/2 Tbsp Tomato Paste+ Add to Shopping List |
1 lb Ground Chicken or Turkey. (you can also use Ground Beef)+ Add to Shopping List |
1 1/2 Tbsp Chili Powder+ Add to Shopping List |
1 Tsp Cumin+ Add to Shopping List |
1 Tsp Dried Oregano+ Add to Shopping List |
1/4 Tsp Cayenne Pepper+ Add to Shopping List |
Salt+ Add to Shopping List |
Black Pepper+ Add to Shopping List |
28 oz Can Crushed Tomatoes+ Add to Shopping List |
15 oz Can Pinto Beans, drained and rinsed+ Add to Shopping List |
4 oz Can Green Chilies+ Add to Shopping List |
Fritos, for serving+ Add to Shopping List |
Shredded Cheddar Cheese, for serving+ Add to Shopping List |
Jalapeno, thinly sliced, for serving+ Add to Shopping List |
Directions:
- Prepare your ingredients. Chop the onion, minced the garlic, drain and rinse the beans.
- Heat oil in a large pot or deep skillet over medium heat. Add 2/3 of the onion and cook until soft and translucent, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomato paste and stir to combine.
- Add the ground chicken and cook, crumbling as it cooks, until completely cooked through, about 7-8 minutes.
- Add the chili powder, cumin, oregano, and cayenne. Liberally salt with salt and pepper. Stir to combine.
- Add the entire can of crushed tomatoes, pinto beans, and entire can of green chilies. Stir to combine and bring to a boil. Reduce the heat to low and simmer for 20 minutes.
- Assemble the bowls. Line Fritos around the perimeter of the bowl (or plate). Use a ladle to add a scoop of the chicken mixture to the center of the bowl. Garnish with shredded cheese, chopped onion, and sliced jalapeno. Serve immediately and enjoy!
