Ingredients:
| 3 Large Baking Potatoes, washed and cut into 1-inch pieces |
| 4 Tbsp Butter |
| Salt & Pepper |
| 1 Cup Cheddar Fondue, Queso, or Beer Cheese Sauce |
| 2 Cups Shredded Cheddar Cheese |
| 1 lb Bacon, cooked and crumbled |
| Top the Tater, Seasoned Sour Cream, or Regular Sour Cream |
| Fresh Chopped Chives, for garnish |
Directions:
- Preheat the oven to 400 degrees F. Cut the butter into thin pieces and place half in the bottom of a 9-inch cast iron skillet. Add the potatoes and season liberally with salt and pepper. Add the other half of the sliced butter over the top of the potatoes.
- Cover with foil and bake for 40-50 minutes or until cooked through (easily pierced with a fork). Stir the potatoes after 30 min to ensure they are not sticking to the skillet.
- While the potatoes are baking, cook the bacon according to package instructions. Add the bacon to a food processor and pulse until it resembles fine crumbs. Set aside.
- Remove the foil and top the potatoes with the cheese sauce. Spread over the top. Add the shredded cheese evenly over the top.
- Return to the oven (uncovered) and bake until the cheese has melted, 2-3 minutes.
- Add the bacon and spread evenly over the top. Add a large dollop of sour cream to the center and garnish with chives.
- Serve immediately and enjoy! Season with additional salt and pepper as needed, once served.
