Baked Mexican Street Corn Chicken





Ingredients:

1 Boneless Skinless Chicken Breasts+ Add to Shopping List |
1 Packet Taco Seasoning+ Add to Shopping List |
24 oz Corn+ Add to Shopping List |
1/2 Cup Mayonnaise+ Add to Shopping List |
1/2 Cup Sour Cream+ Add to Shopping List |
2 1/2 Tbsp Lime Juice+ Add to Shopping List |
1 Tsp Salt+ Add to Shopping List |
1/2 Tsp Black Pepper+ Add to Shopping List |
1/2 Tsp Cayenne+ Add to Shopping List |
6 oz Feta Crumbles+ Add to Shopping List |
Cilantro, chopped, for topping+ Add to Shopping List |
Directions:
- Preheat oven to 350 degrees F. Spray a baking dish with cooking spray. Line the chicken in the bottom of the baking dish. Sprinkle the taco seasoning over the top.
- Combine the corn (thawed and/or drained), mayonnaise, sour cream, lime juice, salt, pepper, and cayenne, in a mixing bowl. Pour over the chicken and spread evenly over the top.
- Sprinkle the feta over the top.
- Bake for 40-45 minutes or until the chicken is cooked through and an internal temperature of 165 degrees F is reached.
- Garnish with fresh chopped parsley. Serve and enjoy
