Baked Mexican Street Corn Chicken

Ingredients:
1 Boneless Skinless Chicken Breasts
1 Packet Taco Seasoning
24 oz Corn
1/2 Cup Mayonnaise
1/2 Cup Sour Cream
2 1/2 Tbsp Lime Juice
1 Tsp Salt
1/2 Tsp Black Pepper
1/2 Tsp Cayenne
6 oz Feta Crumbles
Cilantro, chopped, for topping
Directions:
Preheat oven to 350 degrees F. Spray a baking dish with cooking spray. Line the chicken in the bottom of the baking dish. Sprinkle the taco seasoning over the top.
Combine the corn (thawed and/or drained), mayonnaise, sour cream, lime juice, salt, pepper, and cayenne, in a mixing bowl. Pour over the chicken and spread evenly over the top.
Sprinkle the feta over the top.
Bake for 40-45 minutes or until the chicken is cooked through and an internal temperature of 165 degrees F is reached.
Garnish with fresh chopped parsley. Serve and enjoy
