Baked Mexican Street Corn Chicken





Ingredients:
| 1 Boneless Skinless Chicken Breasts |
| 1 Packet Taco Seasoning |
| 24 oz Corn |
| 1/2 Cup Mayonnaise |
| 1/2 Cup Sour Cream |
| 2 1/2 Tbsp Lime Juice |
| 1 Tsp Salt |
| 1/2 Tsp Black Pepper |
| 1/2 Tsp Cayenne |
| 6 oz Feta Crumbles |
| Cilantro, chopped, for topping |
Directions:
- Preheat oven to 350 degrees F. Spray a baking dish with cooking spray. Line the chicken in the bottom of the baking dish. Sprinkle the taco seasoning over the top.
- Combine the corn (thawed and/or drained), mayonnaise, sour cream, lime juice, salt, pepper, and cayenne, in a mixing bowl. Pour over the chicken and spread evenly over the top.
- Sprinkle the feta over the top.
- Bake for 40-45 minutes or until the chicken is cooked through and an internal temperature of 165 degrees F is reached.
- Garnish with fresh chopped parsley. Serve and enjoy
