Ingredients:
| 2 Cups Flour |
| 2 Tsp Baking Powder |
| 4 Tbsp Pistachio Instant Pudding Mix |
| 1 Tsp Salt |
| 2 Tbsp Sugar |
| 1 3/4 Cups Unsweetened Almond Milk |
| 2 Large Eggs |
| 1/4 Cup Unsalted Butter, melted |
| 3 Drops Green Food Coloring |
| Maple Syrup, for topping |
Directions:
- In one mixing bowl, whisk together the flour, baking powder, pistachio pudding, salt, and sugar.
- In a separate mixing bowl, whisk together the milk, eggs, and melted butter. Add the food coloring and whisk again.
- Pour the wet ingredients into the dry ingredients and whisk to combine. There should be no streaks of dry ingredients.
- Preheat a griddle. Drop ¼ cup sized scoops of batter onto the preheated griddle and cook until bubbles form then flip and cook on the other side.
- Transfer to serving plates and serve with butter and maple syrup. Enjoy!
