Pistachio Pancakes

Ingredients:

2 Cups Flour
2 Tsp Baking Powder
4 Tbsp Pistachio Instant Pudding Mix
1 Tsp Salt
2 Tbsp Sugar
1 3/4 Cups Unsweetened Almond Milk
2 Large Eggs
1/4 Cup Unsalted Butter, melted
3 Drops Green Food Coloring
Maple Syrup, for topping

Directions:

  1. In one mixing bowl, whisk together the flour, baking powder, pistachio pudding, salt, and sugar.
  2. In a separate mixing bowl, whisk together the milk, eggs, and melted butter. Add the food coloring and whisk again.
  3. Pour the wet ingredients into the dry ingredients and whisk to combine. There should be no streaks of dry ingredients.
  4. Preheat a griddle. Drop ¼ cup sized scoops of batter onto the preheated griddle and cook until bubbles form then flip and cook on the other side.
  5. Transfer to serving plates and serve with butter and maple syrup. Enjoy!
