Ingredients:
COCKTAIL INGREDIENTS
2 oz Vodka
1 oz Elderflower Liqueur
1 oz Simple Syrup
1 oz Fresh Lemon Juice
2 oz Rhubarb Simple Syrup
RHUBARB SIMPLE SYRUP INGREDIENTS
2 lbs Rhubarb, fresh or frozen, chopped
3 cups Water
Juice of 2 Fresh Lemons
1/2 Cup Sugar
Directions:
Start by making the simple syrup. Add the rhubarb, water, lemon juice, and sugar to a large saucepan. Bring to a boil then reduce the heat to simmer for 20 minutes.
Remove from the heat and allow to cool to room temperature then strain through a fine mesh strainer to remove any large chunks. Discard all solids and pour the syrup into a storage container. Refrigerate until chilled.
Make the cocktail. Fill a cocktail shaker with ice. Add the vodka, elderflower, simple syrup, lemon juice, and rhubarb syrup. Shake vigorously then strain into a glass that is filled with ice. Garnish with a lemon wedge, optional. Serve and enjoy.
