Rhubarb Elderflower Summer Cocktail





Ingredients:
| COCKTAIL INGREDIENTS |
| 2 oz Vodka |
| 1 oz Elderflower Liqueur |
| 1 oz Simple Syrup |
| 1 oz Fresh Lemon Juice |
| 2 oz Rhubarb Simple Syrup |
| RHUBARB SIMPLE SYRUP INGREDIENTS |
| 2 lbs Rhubarb, fresh or frozen, chopped |
| 3 cups Water |
| Juice of 2 Fresh Lemons |
| 1/2 Cup Sugar |
Directions:
- Start by making the simple syrup. Add the rhubarb, water, lemon juice, and sugar to a large saucepan. Bring to a boil then reduce the heat to simmer for 20 minutes.
- Remove from the heat and allow to cool to room temperature then strain through a fine mesh strainer to remove any large chunks. Discard all solids and pour the syrup into a storage container. Refrigerate until chilled.
- Make the cocktail. Fill a cocktail shaker with ice. Add the vodka, elderflower, simple syrup, lemon juice, and rhubarb syrup. Shake vigorously then strain into a glass that is filled with ice. Garnish with a lemon wedge, optional. Serve and enjoy.
- THIS RECIPE IS FOR ONE COCKTAIL BUT YOU WILL YIELD ABOUT 4 CUPS OF RHUBARB SIMPLE SYRUP.
