Loaded Chicken Burrito Bowls





Ingredients:
| 1 Cup Uncooked Basmati Rice |
| Olive Oil |
| 1 lb Ground Chicken (or Ground Turkey) |
| Salt |
| Black Pepper |
| 1 Tbsp Chili Powder |
| 1 Cup Shredded Monterey Jack Cheese |
| 1/3 Cup Fresh Chopped Cilantro |
| Pico de Gallo, for topping |
| Guacamole, for topping |
| Shredded Cheddar Cheese, for topping |
| Sour Cream, for topping |
| Tortilla Chips, for serving |
Directions:
- Cook the rice according to package instructions. Make additional rice if you prefer larger helpings. Add the cilantro and stir to combine. Keep covered to keep warm and set aside while you prepare the rest of the ingredients.
- Heat oil in a large skillet. Add the ground chicken (or ground turkey) and break it apart as it cooks, until completely cooked through. Add the chili powder and season with salt and pepper. Stir to combine.
- Add the Monterey jack cheese and stir to combine and melt.
- Assemble the burrito bowls. Add rice to the bottom of bowls. Top with the chicken (or turkey). Add a scoop of pico de gallo, guacamole, some shredded cheese, a dollop of sour cream, and serve with tortilla chips for scooping. Serve and enjoy!
