Homemade Chocolate Peanut Butter Cups

Ingredients:
6 Tbsp Unsalted Butter, melted
1 1/2 Cup Creamy Peanut Butter
1 Tsp Vanilla Extract
1/2 Tsp Salt
2 1/2 Cups Powdered Sugar
1 Tbsp Refined Coconut Oil
10 oz Chocolate Almond Bark
Silicone Mold (shape of choice)
Directions:
Add the chocolate and coconut oil to a microwave safe bowl. Heat in 30 second increments, stirring in between, until melted and smooth.
Add a dollop of chocolate to each mold and use a paint brush, your fingers, or the back of a spoon to spread the chocolate in an even layer, all the way to the sides, making sure to coat the entire mold. Add additional chocolate if you can see the mold through the chocolate.
Place in the fridge to let the chocolate harden while you prepare the filling. Save the rest of the melted chocolate to use in a later step.
Add the melted butter, peanut butter, vanilla, and salt to the bowl of a stand mixer. Beat until well combined.
Add the powdered sugar, a little at a time, and beat until well combined.
Remove the mold from the fridge. Add the filling to each mold and press into an even layer and all the way to the sides. The mold should be almost full.
Add a dollop of chocolate on top and smooth all the way to the sides, enclosing the filling.
Refrigerate until the chocolate has hardened and set.
CAREFULLY remove the peanut butter cups from the mold. If you go too fast, the chocolate will crack. Serve immediately or store in an airtight container in the fridge until ready to serve. Enjoy!
