Arrange 20 wrappers on the counter. Brush the egg wash over the center of each wrapper. Add a heaping Tbsp of the filling to each then use your fingers to spread the mixture almost all the way to the sides.
Preheat the oven to 225 degrees F and line a baking sheet with parchment paper.
Heat about 2 Tsp oil in a large skillet over medium heat. Once hot, add 4-5 dumplings at a time, placing filling side down. Cook for about 4 minutes. Flip over, add 1 Tbsp water, cover the skillet, and continue to cook for about 2 minutes. The steam will finish cooking the meat and crisp the wrapper. Transfer to the prepared baking sheet and keep warm in the oven while you cook the next batch.
Remove the dumplings from the oven and transfer to a serving platter. Garnish with additional sliced green onion and serve with soy sauce for dipping. Enjoy! Pairs well with a side of cilantro lime rice.
