Parmesan Cheddar Rosemary Bites

Ingredients:

2 1/2 Cups Shredded Cheddar Cheese
1/2 Cup Unsalted Butter, softened
1/4 Cup + 1 Tbsp Half & Half
1 Tsp Salt
1 1/2 Cups All Purpose Flour
1 1/2 Cups Grated Parmesan Cheese
3 Tbsp Fresh Rosemary, finely chopped

Directions:

  1. Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper.
  2. Add the cheddar cheese, butter, half and half, and salt to the bowl of a stand mixer and beat until combined. Gradually add the flour, parmesan cheese, and rosemary, and beat until well combined.
  3. Remove the dough to a well-floured surface (work in batches if you need to). Roll out until about 1/8-inch thick. Use a cookie cutter to cut out shapes and place on the prepared baking sheets, spaced slightly apart.
  4. Bake 12-14 minutes or until starting to turn golden brown. Let cool for about 5 minutes then transfer to wire racks to finish cooling for about 30 minutes.
  5. Serve and enjoy!
  6. Leftovers should be stored in an airtight container in the fridge.
