Garlic Butter Chicken Bites

Ingredients:

1 lb Boneless Skinless Chicken Breasts, cut into bite-sized pieces
1 Tsp Salt
1/2 Tsp Black Pepper
1 Tsp Paprika
1/2 Tsp Garlic Powder
Olive Oil
4 Tbsp Unsalted Butter
4 Garlic Cloves, minced
1 Tbsp Lemon Juice
1 1/2 Tsp Dijon Mustard
1/2 Tsp Red Pepper Flakes
2 Tbsp Fresh Chopped Parsley, plus more for garnish

Directions:

  1. Add the chicken to a Ziploc bag along with the salt, pepper, paprika, and garlic powder. Seal and toss to coat.
  2. Heat oil in a skillet over medium heat. Add the chicken and cook until golden brown and an internal temperature of 165 degrees F is reached. Remove to a plate.
  3. In the same skillet, melt the butter. Add the garlic and stir to combine. Let cook until fragrant, about 30 seconds.
  4. Add the lemon juice, Dijon, red pepper flakes, and parsley. Stir to combine and cook for 1 minute.
  5. Return the chicken to the skillet and stir to coat. Let cool for an additional 1-2 minutes to absorb the flavors.
  6. When ready to serve, garnish with additional parsley. Enjoy!
