Ingredients:
| 1 Can Corn, drained |
| 1 Can Fire Roasted Corn, drained |
| 1 Red Bell Pepper, chopped |
| 1 Pint Cherry Tomatoes, quartered |
| 3 Green Onions, green part only, thinly sliced |
| 1 Avocado, chopped |
| 14 oz Bag Shredded Lettuce |
| 1 Packet Taco Seasoning, divided |
| 2 Cups Shredded Cheddar Cheese |
| 1 Bag Taco Doritos, or sub with Nacho Cheese Doritos |
| 1 Cup Sour Cream |
| 1/2 Cup Mayonnaise |
| 1/2 Cup Salsa, mild or medium |
| Juice from 1/2 a Lime |
Directions:
- In a small bowl, whisk together the sour cream, mayo, salsa, 1 Tbsp taco seasoning, and lime juice. Set aside.
- Prepare the vegetables; drain the corn, chop the bell pepper and avocado, slice the tomatoes and green onion.
- To a large mixing bowl, add the lettuce, corn, bell pepper, tomatoes, green onion, and avocado. Toss to combine.
- Add the rest of the taco seasoning and cheese and toss to combine.
- Open the bag of Doritos and lightly crush. You want larger pieces, not crumbs. Add to the mixing bowl and toss to combine.
- Add about ½ of the dressing and toss to coat. Add additional dressing, as needed.
- Serve and enjoy!
- If making ahead of time, mix everything except the Doritos and dressing. When ready to serve, add both and toss.
