Baked Caprese Cups

Ingredients:

1 Sheet Frozen Puff Pastry, thawed
4 oz Fresh Mozzarella, cut into 1/2-inch cubes
12 Cherry Tomatoes, halved
Olive Oil, for drizzling
Balsamic Glaze, for drizzling
Sea Salt, for garnish
Fresh Chopped Basil, for garnish

Directions:

  1. Preheat the oven to 400 degrees F and spray a mini muffin tin (24-cup) with cooking spray.
  2. Unfold the thawed full pastry and use a rolling pin to roll out slightly. Cut into 4 strips (lengthwise), then cut each strip into 6 squares.
  3. Transfer each square to the muffin tin and press down in the center to create a well.
  4. Place one piece of mozzarella in each well. Top each with a tomato slice.
  5. Bake for 18-20 minute or until the puff pastry is golden brown, the cheese is melted, and the tomatoes have burst.
  6. Carefully remove from the muffin tin and transfer to a serving platter. Lightly drizzle with olive oil and balsamic glaze. Sprinkle sea salt over the top. Garnish with fresh chopped basil.
  7. Serve and enjoy!
