Ingredients:
| 1 Sheet Frozen Puff Pastry, thawed |
| 4 oz Fresh Mozzarella, cut into 1/2-inch cubes |
| 12 Cherry Tomatoes, halved |
| Olive Oil, for drizzling |
| Balsamic Glaze, for drizzling |
| Sea Salt, for garnish |
| Fresh Chopped Basil, for garnish |
Directions:
- Preheat the oven to 400 degrees F and spray a mini muffin tin (24-cup) with cooking spray.
- Unfold the thawed full pastry and use a rolling pin to roll out slightly. Cut into 4 strips (lengthwise), then cut each strip into 6 squares.
- Transfer each square to the muffin tin and press down in the center to create a well.
- Place one piece of mozzarella in each well. Top each with a tomato slice.
- Bake for 18-20 minute or until the puff pastry is golden brown, the cheese is melted, and the tomatoes have burst.
- Carefully remove from the muffin tin and transfer to a serving platter. Lightly drizzle with olive oil and balsamic glaze. Sprinkle sea salt over the top. Garnish with fresh chopped basil.
- Serve and enjoy!
