Caprese Towers

Serves 4


Ingredients:

1 lb fresh mozzarella, sliced
2 large tomatoes, sliced
1 package fresh basil, leaves pulled off whole
1/3 cup olive oil
1/4 cup red wine or balsamic vinegar
Salt, to taste
Pepper, to taste

Directions:

  1. In small bowl combine oil and vinegar and set aside. On serving plate layer mozzarella, tomato slice, basil leaf on top of one another, repeating twice. You should have two of each in one tower. Sprinkle each tower with salt and pepper, then drizzle the oil mixture over each and around on the plate. Serve immediately!
