Ingredients:
| 1 lb Boneless Skinless Chicken, cut into 1-inch pieces |
| Sesame Oil |
| 3 Garlic Cloves, minced |
| 1 1/2 Tsp Fresh Ginger, grated |
| 1/2 Cup Creamy Peanut Butter |
| 1/4 Cup Low-Sodium Soy Sauce |
| 2 Tbsp Honey |
| 1 Tbsp Rice Vinegar |
| 1/2 Cup Water |
| Chopped Peanuts, for garnish |
| Sliced Green Onion, for garnish |
| Cooked Rice, for serving |
Directions:
- In a mixing bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, and water. Set asdie.
- Heat oil in a large skillet or wok over medium-high heat. Once hot, add the chicken and cook until browned on all sides and cooked through, about 7-8 minutes.
- Add the garlic and ginger and stir to combine. Cook until fragrant, about 1 minute.
- Add the sauce and stir to combine. Reduce the heat to medium-low. Let simmer for 3-5 minutes, stirring occasionally.
- Serve the chicken over cooked rice. Garnish with sliced green onion and chopped peanuts. Add some sesame seeds for additional flavor (optional). Enjoy!
