Strawberry Mint Julep Mocktail

Ingredients:

SIMPLE SYRUP:
1/2 Cup Water
1/2 Cup Sugar
2 Sprigs Mint Leaves
MOCKTAIL:
2 Mint Leaves
2 Strawberries
2 Tbsp Mint Simple Syrup
Ice
Limeade or Lemonade

Directions:

  1. Prepare the simple syrup. Combine the sugar and water in a saucepan. Stir over medium heat until dissolved and hot.
  2. Turn off the heat, add the mint, and cover. Let steep for 15 minutes.
  3. Remove the mint leaves and transfer to a jar. Chill in the fridge until ready to use. Makes enough for 4 cocktails.
  4. Add 2 strawberries and 2 Tbsp of mint simple syrup to the bottom of a lowball glass or small tumbler. Muddle together. Add 1 mint leaf and muddle again.
  5. Fill about ¾ full of ice. Top with limeade or lemonade. Stir to combine.
  6. Garnish with the remaining strawberry and mint leaf. Enjoy!
