Oven Roasted Sweet Potatoes With Black Beans and Cheddar





Ingredients:
| 2 Medium Sweet Potatoes, scrubbed and dried |
| Olive Oil |
| Salt |
| Black Pepper |
| 1 Cup Canned Black Beans, drained and rinsed |
| Sharp Cheddar Cheese, shredded |
| 1 Avocado, sliced, for serving |
Directions:
- Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
- Slice the sweet potatoes in half, lengthwise. Rub olive oil all over then place face down on the baking sheet. Sprinkle salt over the top.
- Bake for 30-35 minutes or until cooked through and easily pierced with a fork.
- Remove from the oven and turn over. Press down gently to sit flat and not tip over, if needed. Season with salt and pepper.
- Sprinkle cheese over the top of each potato then top with black beans.
- Bake for 4-5 minutes or until the cheese is melted and the beans are heated through.
- Serve immediately, while hot, with sliced avocado on the side (optional). Enjoy!
