Ingredients:
| 1 Refrigerated Pie Crust |
| 6 Slices of Bacon |
| 2 Large White Onions, thinly sliced |
| 2 Tbsp Unsalted Butter |
| Salt |
| Black Pepper |
| 2 Large Eggs |
| 1/2 Cup Sour Cream |
Directions:
- Preheat the oven to 400 degrees F.
- Carefully roll out the pie crust and set in a tart pan. Press into the bottom and along the sides. Set aside.
- Cook the bacon according to package instructions. Remove to a paper towel lined plate to cool. Once cool, chop into small pieces.
- Thinly slice the onions (recommend using a mandoline).
- Melt the butter in a large skillet over medium heat. Add the onions and liberally season with salt. Sauté, stirring occasionally, until the onions are soft and translucent, and start to caramelize, about 15 minutes. Transfer to a plate and let cool.
- In a large mixing bowl, whisk the eggs. Add the sour cream and a pinch of black pepper, whisk again. Add the bacon and cooled onions and stir to combine.
- Pour the mixture into the prepared tart pan.
- Bake for 35-40 minutes or until the crust starts to turn golden brown and the egg mixture is cooked through. Remove from the oven and let sit for 10-15 minutes.
- When ready, slice, serve (hot or room temp), and enjoy!
- Leftover should be stored in an airtight container in the fridge.
