1 1/2 lb. top sirloin steak, freeze for twenty minutes then slice into thin strips
1 package fajita seasoning
1 tablespoon Olive oil
1 large green bell pepper, sliced into thin strips
1 large red onion, cut in half and sliced thinly crosswise
1 can chili flavored black beans,, warmed in microwave 3 to 4 minutes
2 cups steamed white rice, tossed with 1 teaspoon lime zest and1 teaspoonlime juice
2 cups shredded Mexican blend cheese
8 large burrito size flour tortillas, warmed in the microwave for 10 seconds
Salsa, for serving
Sour cream, for serving, if desired
Guacamole, for serving, if desired
Directions:
Toss steak with olive oil and 2/3 of the fajita seasoning.
Preheat large skillet to high heat. Add 1 tablespoon olive oil to pan and swirl to coat. Add half of the steak and sauté until cooked through. Remove to plate and cover to keep warm while you cook the rest of the steak. Remove rest of steak to plate and cover. Add 1 more tablespoon of olive oil to the pan and add the green pepper and onion strips and sauté until almost cooked through. Add rest of fajita seasoning to the veggies and toss to coat. Add steak back to the pan and sauté a couple minutes to reheat.
Lay a warm tortilla on your board and put a line of rice, beans, steak and veggie mixture, cheese and salsa down the center. Top with sour cream and guacamole, if using. Fold the top end over about 2 inches, then fold in both sides and roll up.
