Breakfast Burritos

Serves 4


Ingredients:

8 flour tortillas
1 lb. Festival bulk breakfast pork sausage, or1 (16 oz.) Roll of Jimmy Dean Hot Sausage
1 tablespoon butter
6 eggs
Salt
Pepper
2 cups shredded mild cheddar cheese, (or your choice)
Sour Cream, Salsa, Green Olives, Black Olives, Sliced Fresh Avocado or Jalapenos, optional toppings

Directions:

  1. Preheat large skillet on medium-high heat and brown sausage; drain fat.
  2. In another skillet add butter and scramble eggs to become fully cooked; sprinkle with salt and pepper and remove from heat.
  3. Preheat oven to 325 degrees F. Wrap tortillas in foil and place in oven to warm, up to 10 minutes.
  4. To assemble burritos: Place sausage, eggs, and cheese down the middle of each warm tortilla, fold in ends and roll up. Top with favorite toppings, everyone can create their own!
