Bruschetta, Cucumber and Avocado





Serves 6
Ingredients:
| 2 medium tomatoes, seeded & chopped |
| 1/2 cup capers |
| 2 cloves garlic, chopped |
| 1 tablespoon fresh oregano, chopped |
| 1/4 cup chopped fresh basil |
| 1/4 cup red wine vinegar |
| 1/4 cup avocado oil |
| Salt, to taste |
| Pepper, to taste |
- With both recipes, simply combine all ingredients together, toss gently and serve!
- You can also let your bruschetta sit at room temperature for up to 2 hours before you serve. It's good for the flavors to get to know each other.
| 2 cups diced English cucumber |
| 1 small avocado, diced |
| 1 teaspoon minced Serrano pepper |
| 2 tablespoons chopped cilantro |
| 1 green onion, chopped |
| 1 tablespoon fresh lime juice |
| 1/4 cup avocado oil |
| Salt, to taste |
| Pepper, to taste |
