Flatbread Pizza with Gouda & Caramelized Onions





Serves 8
Ingredients:
| 2 10-inch flour tortillas |
| 2 tablespoons olive oil |
| 1 cup aged Gouda, peeled |
| 1 tablespoon fresh thyme, or 1 teaspoon dried |
| Salt, to taste |
| Pepper, to taste |
- Heat large skillet on medium-high heat with butter and oil. When hot, add onion, salt, pepper and sugar. Stir once, the let cook 3 minutes. Stir again and let cook another 3 minutes. Do so until onions are a dark golden brown. Remove and set aside.
- Rub each tortilla with 1 tablespoon olive oil. Place each on a baking sheet, sprinkle with onions, peeled gouda, thyme, salt & pepper. Bake at 375 degrees F for 15-20 minutes. Enjoy!
| 1 large yellow onion, julienned |
| 2 tablespoons butter |
| 2 tablespoons olive oil |
| 1 tablespoon sugar |
| Salt, to taste |
| Pepper, to taste |
