Flatbread Pizza with Gouda & Caramelized Onions

Ingredients:
2 10-inch flour tortillas
2 tablespoons olive oil
1 cup aged Gouda, peeled
1 tablespoon fresh thyme, or 1 teaspoon dried
Salt, to taste
Pepper, to taste
Heat large skillet on medium-high heat with butter and oil. When hot, add onion, salt, pepper and sugar. Stir once, the let cook 3 minutes. Stir again and let cook another 3 minutes. Do so until onions are a dark golden brown. Remove and set aside.
Rub each tortilla with 1 tablespoon olive oil. Place each on a baking sheet, sprinkle with onions, peeled gouda, thyme, salt & pepper. Bake at 375 degrees F for 15-20 minutes. Enjoy!
