Green Beans with Caramelized Shallots

Ingredients:
4 tablespoons olive oil
2 large shallots, or 4 small, sliced thin
1 lb bag green beans
1/4 cup gratedparmesan cheese
2 tablespoons unsalted butter
1 teaspoon Salt, more to taste
Pepper, to taste
Directions:
Fill a saucepan halfway with water, bring to boil & add 1 teaspoon salt. Add beans and cook for 2 minutes. Drain and place in bowl of ice water to stop cooking, drain well & set aside.
Add oil in large skillet on med-high heat. When hot, add shallots & caramelize, about 5 minutes. Then add beans, butter, salt & pepper, and parmesan. Toss well & turn off heat. Serve immediately.
